Carrot top cilantro spinach pesto

Put those carrot tops to use!

one bunch cilantro

one bunch carrot tops, stem part removed

2 cups baby spinach

1/3 cup olive oil

juice of two lemons

2 garlic cloves

1 t. salt

Put all the ingredients in a blender and process until smooth. Great for topping roasted carrots, meat, pasta and bread.
