Crunchy Cabbage Salad with Spicy Peanut Dressing

Cruciferous vegetables include
cabbage, broccoli, cauliflower, Brussels sprouts, bok choy and more! They are an important part of a healthy diet. They contain phytonutrients- plant based compounds- that can lower inflammation in your body. Try this recipe and even switch up some of the cabbage with shaved Brussels sprouts or julienned bok choy.
Ingredients:
3 T. peanut butter
4 T. apple cider vinegar
1-1/2 T. hot water
1/4 t. salt
1 T. sriracha or hot sauce
1 ripe sweet pepper, julienned
3 green onions, sliced
one carrot, julienned
1 cup shredded red cabbage
1 cup shredded green cabbage
1/4 cup chopped peanuts
Directions:
1. Make the dressing by combining the first 5 ingredients.
2. Mix the vegetables in a bowl.
3. Add the dressing to the vegetable and toss. Top with green onions and peanuts.
