Easy to memorize pancake recipe

If I have a recipe that I make over and over I have found that I slightly change the amounts used to be even and similar so I can remember them easier and save time not having to look them up. Here is the pancake recipe I use which worked great with the flour from Red Cat Farm.

1/2 stick of butter, melted

2 cups Red Cat whole wheat flour

2 t. baking powder

1/2 t. salt

1 t. vanilla

3 rounded tablespoons sugar

2 cups whole milk

3 eggs

Use two mixing bowls to mix the wet and dry ingredients separately. Pour the dry ingredients into the wet ingredients and stir until it is just combined. Don’t over mix it. Even if there are lumps from the flour, they will get mixed in when it is cooking.


I use a cast iron griddle that goes over my electric burners to make pancakes because I try to avoid non stick pans.

I use a standard size ladle full for each pancake. When the bubbles start popping on the first side, you can flip them over.
