Sesame and peanut noodles
Sun Noodles make quick peanut noodles and stir fries that can use up random veggies and meat.

This recipe serves 2-3.
Sesame and peanut noodles
2 bundles of sun noodles cooked for 2 minutes, cooked under cold water and toss with a bit of sesame oil. Or 10 ounces soba or spaghetti.
Sauce:
1/3-1/2 cup of peanut butter
1/2 cup water
3 T. soy sauce
2 T. rice wine vinegar
1 T. grated ginger
1. T grated garlic
1 T. sriracha or hot sauce
1 T. sesame oil
Juice of one lime
sesame seeds to taste
Heat the water and then stir in the peanut butter until smooth. Add the rest of the ingredient.
Toss the sauce with the pasta and any veggies you have on hand like shredded carrots, cabbage and/ or radish, microgreens, cilantro, green onions. You can also toss in leftover meat or tofu. Top with sesame seeds.
