Vegan Chongqing noodles


Makes 4 bowls of soup

1 lb spaghetti or fresh pasta if you have some

2 heads of bok choy or other greens

1 cup chopped peanuts

1 bunch green onion, white and green parts divided

4 cloves garlic, minced

4 t. minced ginger

3 T. soy sauce per bowl

1 t. sesame oil per bowl

1-2 T. chili oil per bowl

1/2 t. black vinegar per bowl

cilantro for garnish


1. Bring water to boil in a large pot and cook spaghetti for 10 minutes.

Set up four bowls.

2. Chop up the bok choy and divide among bowls.

3. To each bowl add some chopped white part of scallion,1 t. minced ginger, 1 clove minced garlic, soy sauce, sesame oil, chili oil, and vinegar.

4. Add pasta water to each bowl, about 1-1/2 to 2 cups. Taste the broth and adjust seasonings, add salt if needed. When the pasta is finished cooking, add the noodles. Garnish with scallion greens, peanuts and cilantro.
